Ingredients
· 1 cup basmati rice
· 2 lbs. large raw shrimp, peeled and deveined
· 2 tbsp extra virgin olive oil
· 2 tbsp lemon juice, freshly squeezed
· 1 1/2 tsp Papou’s Majik Mix Seasoning Blend
· 1 red bell pepper, diced into 1” pieces
· 1 yellow bell pepper, diced into 1” pieces
· 1 medium zucchini, sliced in half moons
· 1 small red onion, diced into 1” pieces
· ¼ cup feta cheese, crumbled
· ½ cup Kalamata olives, halved
· Tzatziki sauce, for garnish and serving
· Fresh dill for garnish (optional)
Method
Cook the rice according to package directions.
Place the shrimp in a medium bowl and drizzle with 1 tbsp olive oil, ½ tsp Papou’s Majik Mix, and lemon juice. Stir to combine and let the shrimp marinate for 15 min.
Meanwhile, heat 1 tbsp olive oil in a large non-stick skillet over medium heat. Add the diced peppers, zucchini, and onion,s and cook until the veggies are tender and slightly caramelized. Sprinkle with 1 tsp Papou’s Majik Mix and stir to incorporate. Remove the veggies to a plate once cooked.
Add the shrimp and the marinade to the hot skillet and cook for 5 minutes until the shrimp is pink and cooked through.
Place ½ cup of rice in each bowl and top with shrimp, cooked vegetables, 1 tbsp feta cheese, 1 tbsp sliced olives, and 1 tbsp tzatziki sauce on each bowl. Garnish with chopped dill and serve with a lemon wedge if desired.
