Ingredients:
- 1 loaf crusty French baguette, sliced ½” thick
- 4 tbsp extra virgin olive oil, divided
- 1 garlic clove, minced
- 5 ripe tomatoes, diced
- ¼ cup feta cheese, crumbled
- 1 bunch Fresh basil, thinly sliced
- 1 tsp Papou’s Majik Mix
- Optional – add chopped Kalamata olives for extra flavor
Method:
Heat a grill pan or large skillet over medium heat.
Brush each slice of bread with olive oil on both sides. Place the bread in the hot pan and toast until golden.
Meanwhile, in a medium bowl, combine the diced tomatoes with 2 tbsp olive oil, minced garlic, Papou’s Majik Mix, crumbled feta, and sliced basil. Stir to combine.
Remove the bread from the grill pan and spoon a tablespoon of the tomato mixture over each slice of bread. Transfer to serving platter. Allow to sit for 20 minutes before serving for the best flavor.
