Ingredients

1 tbsp extra virgin olive oil

1 onion, diced

3 carrots, peeled and diced

2 celery ribs, diced

1 tsp Papou’s Majik Mix Greek Seasoning Blend

2 chicken breasts

1 cup uncooked orzo pasta

8 cups chicken broth
-
Juice and zest of 2 lemons

Fresh dill for garnish
Method

Add 1 tablespoon olive oil to the pot and add carrots, onion, and celery. Cook until tender 6 - 8 minutes. Stir in the garlic and cook until fragrant, about 1 minute.

Season with Papou’s Majik Mix.

Add the chicken broth and the chicken breasts. Bring to a boil, then reduce to a simmer until the carrots are tender and the chicken is cooked through, about 18- 20 minutes.

Add the orzo and simmer until the pasta is tender, about 10-12 minutes.

Remove the chicken from the pot, shred or dice it, and add it back to the soup.

Stir in the lemon juice, lemon zest, and fresh and dill along with a drizzle of extra virgin olive oil. Check for seasoning and adjust as needed.

Serve with rustic homemade bread or crackers.
