Ingredients

  • 1 ½ lbs. pork tenderloin

  • 6 garlic cloves, minced

  • 1 ½ teaspoons fresh rosemary, minced

  • 2 tbsp red wine vinegar

  • 2 tbsp freshly squeezed lemon Juice

  • 2 tsp Papou’s Majik Mix Greek Seasoning Blend

  • ¼ cup extra virgin olive oil 

  • 1 red onion

  • Tomato, sliced for serving

  • Pita bread for serving

  • Tzatziki sauce for serving


Equipment: wooden or metal skewers



Method

  • Remove the silver skin from the pork tenderloin and dice it into 1” pieces, placing them into a medium bowl. 

  • Prepare the marinade by combining olive oil, garlic, red wine vinegar, lemon juice, Majik Mix, minced rosemary, and pour it over the pork and stir to combine.  Cover and refrigerate for at least 2 hours, or overnight to allow the flavors to tenderize the meat. 

  • Soak the wooden skewers in water for a few minutes to prevent burning. 

  • Thread the pork alternating with chopped red onion onto the skewers.

  • Heat a grill or grill pan over medium heat. 

  • Place the pork skewers onto the grill pan or grill and cook for 6 minutes on each side until the pork is cooked through. 

  • Serve with sliced red onion, sliced tomatoes and Tzatziki sauce in a toasted pita and enjoy.
