Ingredients

8 oz orzo pasta

1 pint grape or cherry tomatoes, halved

1 cup Kalamata olives, halved

1 cup cucumbers, diced

½ cup red onion, diced

¼ cup feta cheese, crumbled

2 tbsp fresh dill, minced

⅓ cup Olive oil
-
¼ cup Apple cider vinegar

Method

Bring a large pot of water to a boil, then add the orzo pasta. Boil for 10-12 minutes until pasta is cooked through. Add to the colander and rinse with cold water.

In a large bowl, combine the halved tomatoes, olives, cucumbers, red onion, feta cheese, and fresh dill.

Add the rinsed orzo and mix to combine.

In a jar or bowl, combine the olive oil, apple cider vinegar, and the seasoning blend and whisk to combine.

Pour the dressing over the orzo salad and stir to combine.
