Ingredients

  • 8 oz orzo pasta

  • 1 pint grape or cherry tomatoes, halved

  • 1 cup Kalamata olives, halved

  • 1 cup cucumbers, diced

  • ½ cup red onion, diced

  • ¼ cup feta cheese, crumbled

  • 2 tbsp fresh dill, minced

  • ⅓ cup Olive oil

  • ¼ cup Apple cider vinegar

  • Papou’s Majik Mix Seasoning Blend



Method

  • Bring a large pot of water to a boil, then add the orzo pasta.  Boil for 10-12 minutes until pasta is cooked through.  Add to the colander and rinse with cold water. 

  • In a large bowl, combine the halved tomatoes, olives, cucumbers, red onion, feta cheese, and fresh dill. 

  • Add the rinsed orzo and mix to combine. 

  • In a jar or bowl, combine the olive oil, apple cider vinegar, and the seasoning blend and whisk to combine. 

  • Pour the dressing over the orzo salad and stir to combine.
