Ingredients:
· 1 tbsp extra virgin olive oil
· 1 tsp Papou’s Majik Mix Greek Seasoning Blend
· 3 chicken breasts, sliced ½” thick
· 1 large yellow onion
· 1 clove of garlic, minced
· 1 pint grape tomatoes
· ½ cup Kalamata olives, halved
· 1 garlic clove, minced
· ¼ cup feta cheese, crumbled
· 1/3 cup white wine or chicken broth
· Fresh basil, for garnish
Method:
Heat olive oil in a large skillet over medium heat.
Season the chicken with Papou’s Majik Mix on both sides. Add to the skillet and sear until browned on both sides.
Remove the chicken from the skillet and place in a plate to keep warm. Add the onions to the skillet and sauté until tender, 5 min. Add the garlic and cook until fragrant, for 1 minute. Add the tomatoes and olives to the skillet, along with ½ tsp Papou’s Majik Mix.
Cook for a few minutes until the tomatoes begin to soften. Add the chicken back to the skillet and add the white wine or chicken broth. Top with feta cheese and cover with a lid. Cook for 10 – 12 minutes until the chicken is cooked through and the tomatoes are soft.
Garnish with fresh sliced basil and serve over rice, pasta or with a side of crusty bread.
